Cabbage and chicken sausage meal
I got this recipe from The Biggest Loser - you have to like cabbage though. Slice half a medium head of cabbage, a medium yellow onion, and half a pound of fresh mushrooms. Slice lengthwise down the center of a chicken sausage (I like chicken, spinach and cheese) and remove the casing. Then slice the sausage and saute in a large pan with a little extra virgin olive oil spray, just till the sausage is warm. Then add the vegetables to the pan. I add about a tablespoon of olive oil and saute the whole mixture until soft - about 5 minutes or so. I think they only count the sausage as calories, but even if you count the olive oil it still only comes out to about 230 calories. You could use the oil spray to cut down on calories if you want. I buy the sausages that are 110 calories each. Enjoy!
