I've made this as a sort of Hawaiian style sweet bread for deserts (or even sandwiches) and it works really nicely.

I just tested removing the corn starch and instead split the 1/4 of corn starch and replaced with the Tapioca Starch and Potato Starch and it worked beautifully (actually preferred it - moister). Anyway, the picture is VERY accurate and it's super tasty. I thought I'd share it for anyone looking for something that's different whose GF and bored of their breads. I've even cut this into cubes and used it as a based for a Christmas desert where I put fresh strawberries on top and boy was it good.

You're welcome! It's delicious. Oh, be sure to run the knife through it before you put it into the oven. If you don't, you will literally have bubbles within it. :) You'll also want to make sure your oven is nice and hot before you put it in so that you don't panic about it falling. This is one of my favorite recipes. It seems pretty easy to modify. By the way, Tapioca Flour is the same thing as Tapioca Starch BUT Potato Flour is NOT the same thing as Potato Starch. I made that mistake and now have a bag of potato flour that I use as a thickener for soups.
