Really good Fish tacos

Had to share this was my first time cooking Tilapia

What you need
Mission - Yellow Corn Tortillias (Extra Thin), 2 Tortillias 90 24 2 3
Onions - Raw, 0.25 cup, chopped 17 4 0 0
Tomatoes - Red, ripe, raw, June thru October average, 6 cherry 22 2 0 0
Fish - Tilapia Fillets, 5 oz 125
Fat free italian dressing 20
Sliced mushrooms 1 cup 19
Cilantro-to taste 1
lime juice- 25
minced garlic 3

Season fish with lemon peper, salt and cajun seasoning set aside

combine garlic, onion, cilantro, tomato, and mushrooms wtih lime juice set aside.

I cooked 2 fillets (raw it was 5 oz) in a hot skillet with a coating of spray on olive oil I until edges turned white fliped and let other side get crispy than added 2 tablespoons of water and covered to let it finish cooking by steam.

than I sauteed the mushroom mixture in the fat free dressing
heated up the corn tortillias and it was enough for 4 tacos but i only ate it with 2 tortillias to cut back the cals.

Very good and filling!
about 322 calories for both tacos

    I'd make whole wheat tortilla's with pulled chicken mixed in a homemade BBQ sauce.....oh me oh MY!

    YUM! I'm hooked on Tilapia. My fave is to make it cajun style with lemon juice and Paul Prudhommes Cajun mix sprinkled all over it. I pan fry it with canola spray at 0 calories and enjoy.
