panko chicken
I had heard somewhere that marinating chicken in buttermilk makes it better. This weekend, I marinated chicken cutlets (smaller than a whole breast) in buttermilk that I seasoned with tastefully simple seasoned salt. I let them soak for about 2 days. Then I took them right out of the marinade and dredged them in panko bread crumbs. Some things I have read say you should use and egg white first, but I skipped to see how things would go. Baked them for about 25 minutes (tunrning over at 10) at 375. They came out great! So juicy. Now I have cut lets for dinner whenever I do not feel like being creative. I put in all of the ingredients and a cutlet with asapragus is under 400 calories and delicious! FYI, I also saved a couple and pan fried them, no breading at all, still really good. Great salad toppers.
