Veggies my husband will eat for dinner!

I am trying to make low-glycemic improvements in my diet. Part of that is eating a lot more vegetables. But, it's hard to do it if my husband is not totally on board. I know he could just 'suck it up and do it', but permanent healthy changes will only be possible if we enjoy our food....I haven't found any vegetable that he likes by itself with dinner (for example some corn or green beans), but sometimes I have a bit more luck if I mix some together in a stirfry, or cook them with chicken or something. He does not like sweet things.

What is your favorite (cooked) vegetable recipe for dinner? Something the whole family enjoys?

    I had a butternut squash and leek pasta which was delicious. The squash becomes so creamy that it makes the perfect sauce and doesn't even taste like veggies!

    I have tried roasted kale leaves for the first time, amazing!!! http://www.foodnetwork.com/recipes/crispy-oven-roasted-kale-recipe/index.html I made my oven hotter than this, 350 degrees, I like the leaves to get really crispy:)

    Good 'ol salsa and chips and guac....great vege dish.

    How 'bout spaghetti squash with pasta sauce and cheese over the top? My family loves that. Just cut the squash in half, remove the seeds (roast those separately with some olive oil/salt...yum!) place in a baking dish with a bit of water and roast at 350 til tender. Scoop out the squash into a serving dish, top with sauce/cheese and bake until cheese is bubbly/golden.

    Steamed broccoli with either a little bit of cheddar of parmesan cheese sprinkled on it. We've also used a little bit of the savory cream cheeses that Kraft has in the dairy section.

    Frozen, French cut string beans steamed with a little bit of Chef Paul's Blackend Redfish Magic or Tony Chachere's goes over well too.

    My husband is a bit of a veggiephobe. I add veggies into recipes he likes. I've got a great parmesan rice recipe so I just toss some peas in there. But also, you can make veggies just for you. I often make a starchy side and a veggie, knowing that he is not going to eat the veggie. It's there if he wants it, but I'm fine with just eating it myself. If I didn't take that approach I'd never get to eat mushrooms, asparagus, or squash, and those are all favorites of mine. :)

    Also roasting veggies is my new favorite. I throw carrots, mushrooms, asparagus, and maybe potatoes (depending on how my calorie goal looks) in a roasting pan with garlic, olive oil, and onions, and let it roast for a long time (45 minutes, minimum). It's amazing. But my hubby still won't eat anything but the carrots/potatoes. :)
