Banana Bread Recipe???

I have some ripe bananas and would like to make some banana bread. Does anyone have a good recipe? Mine all have chocolate chips or too much shortening.

    OMG, i just made the most amazing light banana bread yesterday, do you like coconut??
    If you do, then I've got to share the recipe but if you're not a coconut lover you might not like it. :happy:
  • 1/3 cup melted butter
    1 cup sugar ( I use brown)
    3-4 medium bananas
    1.5 cups flour
    2tsp cocoa powder

    Mash bananas, then add butter, mix, then sugar, mix then flour and cocoa powder, mix and put in a buttered tin the oven on gas mark 4-5 for about an hour. I calculated it before and I think about an inch thick slice is 200 cals.

    I have found that in most banana bread recipes you can substitute whole wheat flour for all purpose and I always substitute the margarine/oil/or butter for unsweetened applesauce. Check out this link for a recipe I like to use. I just make the healthier substitutions whenver possible.

    I also needed to use ripe bananas last night, so I made banana bread based on a recipe I found from allrecipes! I changed it slightly to make it healthier, so my modified recipe is below. It turned out pretty good, maybe a little dry. I think next time I will bake it for 50 mins instead of the full 55.


    • 1/3 cup applesauce
    • 1/2 cup honey
    • 1 teaspoon vanilla extract
    • 2 egg whites
    • 1 cup mashed bananas
    • 1 3/4 cups whole wheat flour
    • 1/2 teaspoon salt
    • 1 teaspoon baking soda
    • 1/4 cup hot water

    Directions
    1. Preheat oven to 325 degrees F (165 degrees C).
    2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Spread batter into a greased 9x5 inch loaf pan.
    3. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing
