Low-Carb, Calorie Counting

Hi I have been trying to lose 10-15 pounds. My diet is fairly low-carb (I have type 1 diabetes and low-carb works well since I don't have to give that extra insulin). When I first tried low-carb, I lost weight and fairly fast, but the some of the weight crept back up. I think that I've gained some muscle, but I would like to to lose the extra fat. :P Haha. I haven't been able to lose more than a couple pounds, however. I feel like I'm always craving food/eating. Healthy food, but food none the less. Should I pay more attention to calories? I feel like I should increase the intensity of my exercise and cut my portion-sizes, but whenever I count calories, it's no more than 1,000 calories anyways. What do you guys think?
