portabella mushroom

Afternoon everyone,

I'm going to have a grilled portabella mushroom tonight, and I just can't think of anything to have with it. I normally have a salad, but am just not feeling it. Any suggestions as to what might be good with it? My diary's public if you wanna check it out...

  • portabella mushroom sauteed with a little bit of margarine, and complete seasoning or soy sauce with zucchini

    OR You can do a portabella mushroom pizza--use the portabella as the "Pasta" add riccotta chesse and tomatoe sauce and chesse top it off with a dash of pesto =). Low Carb

    Grilled romaine lettuce. Drizzle a lil olive oil and balsamic vinagar. So yummy.
  • portabella mushroom and red quinoa - you could stuff the mushroom with that or maybe have it on the side :)

    grilled romaine? never had that... how long do you grill it for?

    OMG, I know! I didn't have ricotta, so I waited on the portabella pizza.... I'm going to have it Thursday after I go g-shopping. I'll let you know! =)

    All you do is take a head of romaine and slice it length wise. Brush a little olive oil and grill it (face down) until the outside leaves slightly wilt. Take it off the grill and drizzle a little more olive oil and balsamic vinigar (not too much though). You can add bacon crumbles to it and even blue cheese if you like (oh yeah, and even home made ranch dressing if you would rather have than balsamic). I do not eat meat so I eat mine with just olive oil and balsamic. It tastes sooo mush better than it sounds. My husband and I are hooked on it. I found the recipe on Bobby Flay on Food TV. It especially great in the Summer months. Give it a try!!

    OMG, I'm totally going to try it this summer! It sounds delish, and pretty much everything Bobby Flay cooks is good in my book! Thanks to the info.
