Creative Egg Recipe - blueberry pan "cakes"

What I am learning is that if I eat protein in the morning, I'm much more pleasant to be around (and feel better too). One of my challenges is that I'm not a big egg fan, so I've been doing some experimenting. This tastes like french toast, and you don't need syrup because the blueberries are very juicy.

2 T Bisquick - (I have the low fat mix )
1 Large Egg
1 T Skim Milk
1/4 cup of blueberries (I've only used fresh - but I bet frozen will work too)

Whisk the first three ingredients together. Heat a skillet as you would to make regular-ol' pancakes (medium to medium high heat). Spray pan with Pam so it doesn't stick.

Mix in the blueberries

You can either make 1 large cake, or three small ones - your choice. When the bottom is brown and the top no longer runny, flip the pancake and cook on the other side until completely done.
