Just found this recipe sounds great I want to try it. I like mexican food and it has a lot of calories not healthy at all. So I found this recipe which several people have said it was yummy and its supposed to be really healthy.


Ingredients:
1 green bell pepper, chopped
1/2 medium onion, chopped
1 (10 1/2 ounce) can Healthy Request cream of mushroom soup or 1 (10 1/2 ounce) can Healthy Request cream of chicken soup
1 (10 ounce) can Rotel Tomatoes
6 ounces cubed cooked chicken
4 corn tortillas, torn in pieces
1/3 cup shredded mexican cheese
Directions:

Directions:
1Saute pepper and onion in skillet with Pam. Add soup, Rotel tomatoes and chicken. Alternate layers of tortillas and soup mix. Sprinkle cheese on top.
2Bake at 325°F for 40 minutes or until hot and bubbly.
3Serves 4.

  • I have made this before. From what I remember it was a very bland dish. There are no spices or seasonings listed in the ingredients.... Maybe add a little low sodium taco or fajita seasoning to add some taste. :)
