Hello Everyone!

I just tried a new recipe out tonight and it blew me away, so I thought I'd share it. I'm a vegetarian, so I'm always on the hunt for way to fit in protein and this did double duty with both eggs and garbanzo beans. This would definitely also qualify as comfort food without having comfort calories.

And I'll add this for last week. Favorite breakfast. 7 grain toast. Real cream cheese. Dark heirloom tomatoes. Petite Basque cheese. Salt & pepper.

    My favourite is diet coke chicken. Sounds weird but is really yummy!


    Serves 2, syn free

    4 chicken breasts diced
    1 can of diet coke/coke zero
    6 tbsp of passata
    1 tsp of worcestor sauce/ or soy sauce
    1 diced onion
    fry light

    1. Fry the chicken and onion in fry light until the chicken is cooked
    2. Add the coke, passata and worcestor sauce
    3. cook for 10-15 minutes until the sauce has turned thick and sticky, the sauce will greatly reduce
    4. Serve with wedges/rice and salad

    That looks delish, i'm not vegetarian but would like to try it. Just what are garbanzo beans, and what would you substitute them for?

    Garbanzo beans is the US name for chickpeas.

    I have invented my own one this week, and this is what I made for lunch today (quantities are accidental):

    400g boiled Brussels sprouts
    30g grated parmensan cheese
    160g silken tofu
    2 tsp of soy sauce
    Total kcal: 397.

    Loaded with protein and vegetarian. It is in my diary.

    pork chops and chicken and star soup..... throw the chops in a shallow dish and just put the soup on top. put it in the oven at 250 for 2 1/2- 3 hours. pair with rice and a veggie. easy under 500 calorie dish.

    Ok this is not low calorie but it is awesome and worth every calorie. I make it every couple of weeks. I use boneless skinless chicken thighs to cut the calories a bit.

    Thai coconut soup.. only change is I do lobster and grilled octopus to the shrimp and grouper... yum and very good for head colds..

    I just tried a new recipe of salad this noon. I had almost nothing in my fridge so I had to try something new:

    - 100g of salad (any kind, I took lamb's lettuce)
    - 2 slices of turkey breast cooked with thyme
    - 6 slices of hot chorizo
    - 1 soft boiled egg
    For the dressing, I mixed olive oil and balsamic vinegar.

    This salad has an average of 281 calories, so go for it!

    PS: you can add fresh onions and eat it with a toast, it is also delicious!
    PPS: does anyone know how I could photos on this post? I can't find it! :(

    Peasant Soup

    Saute 1/2 of a diced onion, 4 cloves of minced garlic about 6 minutes in a TBLS of EVOO,then add 4 chopped carrots and 2 stalks of celery plus leaves chopped. Cook 5 minutes then add water until pot is 3/4 full. I add some vegetable boullion and some thyme, salt and pepper. Bring to a boil and then reduce to simmer for 20 minutes. At this point you can add french bread (leftover, hard) or my daughter likes ditalani noodles. Dish it up and grate a little parmesan over the top. I am not a soup fan, but I love this. I actually didn't have thyme so I used herbs de provance and it was delicious.

    I use a 12 inch nonstick stir-fry pan.

    Reminds me of an oldddd recipe of mine that I still use, although I've tweaked it over the years. No need for baking.
    Here's one of my versions:

    Mex-I-Can Poached Eggs

    Ingredients:
    1 large onion, chopped
    1 red bell pepper, chopped
    1-2 jalapenos, diced (depending on how spicy you like things)
    3 gloves garlic, minced
    1 tbsp ground cumin, or less to taste
    2 tsp ground coriander, or less to taste
    1 28 oz can of diced tomatoes (most of the juice drained), or 2-3 large tomatoes diced with juices
    1 cup of cooked, rinsed black beans (I use canned)
    1 cup frozen corn
    60 grams (2 servings) crumbled feta
    2 cups baby spinach, chopped
    1/2 cup fresh cilantro, chopped (or to taste)
    4 large eggs

    Spray the sauté pan with a little cooking spray, and on medium-high heat, add the onions, bell pepper and jalapeno peppers and stir often. Once they have softened, about 5 mins, add the garlic and sauté for another min. Add in the ground cumin and coriander and stir to coat, cook another 2 mins. Add the partially drained tomatoes and lower the heat to medium. Allow the mixture to simmer for 10 mins or so, until the tomatoes thicken. Add the black beans and corn to heat through, 2 mins. Add the feta, spinach and cilantro, and fold gently to combine. Create 4 small divets in the "stew" and fill each with one egg - use a ramekin to avoid breaking shells into the dish and try not to break any yolks! Cover tightly and let the eggs poach soft, until the whites are solid but the yolks are still runny, approximately 5-7 minutes. And then serve, with either a wrap, pita or just on it's own!

    Sometimes I opt out of the beans and corn, add in other veg like broccoli slaw, green beans, or whatever else. Other times I add some shredded chicken. And often I leave the cheese out entirely. It's super easy and wonderfully comforting.

    My favorite no-cook, 5 minute, 6 ingredient go-to meal is:

    6 oz ahi tuna steak (use sushi grade since it's raw. I use the flash-frozen ones from Costco, thawed, and they are still fine too)
    1 haas avocado
    1 tsp toasted sesame oil
    1 tsp sesame seeds
    Soy sauce or kosher salt
    Sriracha hot sauce (optional)

    Dice the raw tuna into smallish pieces. In a chilled bowl mix tuna with sesame oil, sesame seeds, soy sauce, and hot sauce (if desired). Halve the avocado, leaving the skin on, and remove the pit. Slice a sliver off the very bottom of each half so they sit flat on a plate. Sprinkle with a bit of salt then fill the two divots until they overflow with tuna deliciousness. Grab a spoon and enjoy!
