Microwaved Faux Potato Lasagna for One

That is the worst recipe name ever, but I had a craving for lasagna tonight and first of all I didn't have the right ingredients, but this was a pretty good substitute. Also, it had to be low fat because I ate a donut today...

Serves 2

Ingredients:
1 Large baking potato
Green Giant Immunity Boost frozen veggies (broccoli, carrots, peppers)
1 cup Marinara Sauce (I used Prego Ricotta Parmesan marinara)
1/2 cup Fiber One Low Fat Cottage Cheese
Parmesan Cheese for sprinkling

I cooked a baked potato and the veggies in the microwave and then layered 1/2 of the medium baked potato with 1/4 cup low fat Fiber One cottage cheese, 1 cup of broccoli/pepper/carrot veggie mix, 1/2 cup marinara sauce, and a sprinkle of parmesan on the top. Then I nuked it for another 2 minutes. Delicious!!! Extremely filling and satisfying. And there's enough left over for dinner later in the week (or if you are feeding two...that would work too).
