fast pork tenderloin for tonight, help...
Okay I have one of those small pork tenderloins.
Please don't tell me to put it in the crock pot....its too late for that, also my 7 yr old boy has declared he 'hates everything that comes out of the crock pot.'.... (well he just says 'there', and points at it threateningly, since he always forgets what its called...)
I have red bell peppers, onions, many/most spices...
Suggestions?

You could cut into cubes and marinate in a little olive oil and vinegar or lemon juice and whatever spices you want - rosemary is wonderful on pork. Then cook stove top with the peppers and onions. You could serve with a side of rice or pasta.0

Put it in the oven on a cookie sheet or in a glass baking dish on 350 for about 45 minutes or until 160 degrees in the middle. Tastes yummy and juicy. I usually season mine with some lemon pepper seasoning, seasoned salt, and basil and it turns out great.0

We are having pork tenderloin tonight too.
I am going to rub mine with some garlic, cilantro, black pepper, sea salt, and drizzle with a mixture of olive oil oil and lemon juice. Tent it, and bake. Then, I remove the foil tent, and turn the broiler on for another 5-7 minutes, just to brown up the top a little.
I'm serving mine with mashed sweet potato mixed with a bit of cream cheese and cilantro, as well as sauteed red, yellow and orange peppers and zucchini strips...probably will throw an onion in too.
Another good way is to mix a bit of mayo and a bit of sour cream (or greek yogurt), add some dijon mustard and then sprinkle the whole thing with crushed almonds. Delicious!0 -
This might be a little spicy for a 7-year old, but my go-to pork tenderloin is:
2 Tbsp Brown Sugar
1.5 Tbsp Chipotle Chile Powder
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Black Pepper
0.5 tsp Salt
Mix all that up in a freezer bag. Add the tenderloin and toss until covered. Let that all mingle for 5 min. to several hours. In an oven safe pan sear the tenderloin on all sides. Then throw it in the oven at 350 until it reaches 145 degrees internal temperature.
If you like it really spice you can make a glaze of:
3 chipotles in adobo (pour some of the sauce in too)
2 Tbsp honey
2 tsp Minced Garlic
Mix in a food processor and brush it on the tenderloin when you put it in the oven and 5 min. before its done cooking.0 -

Roasted Pork Tenderloin
Ingredients
· 1 sprays cooking spray
· 2 tsp dried thyme, or 2 Tbsp freshly chopped thyme
· 2 tsp dried oregano, or 2 Tbsp freshly chopped oregano
· 1 tsp garlic powder
· 1 tsp onion powder
· 1 tsp table salt
· 1 tsp black pepper, freshly ground
· 2 tsp olive oil
· 2 pound lean pork tenderloin
Instructions
· Preheat oven to 400ºF. Coat a shallow roasting pan with cooking spray.
· Combine thyme, oregano, garlic powder, onion powder, salt and pepper in a small bowl; set aside.
· Rub oil all over pork. Sprinkle thyme mixture all over pork and transfer to prepared pan.
· Roast until an instant-read thermometer inserted in center of pork reads 160ºF, about 30 minutes.
· Let stand 10 minutes before slicing crosswise into thin (about 1/2-inch thick) slices. Yields about 3 ounces per serving.
Notes
· A simple blend of herbs and spices, plus a little olive oil are all it takes to make an excellent pork roast. For variety, try seasoned oils (such as roasted red pepper olive oil or garlic olive oil) and a variety of herbs and spices (such as parsley, rosemary, onion powder and cumin).0 -

All of this, always. I like to do rosemary and oregano instead of cilantro though.0 -
cook on stove top, serve with pasta and vodka sauce with mushrooms and any spices u like0

I did this... and it was good.... served over pasta with some parm cheese on top.
Kids edited out all the red bell peppers... silly children... more for me..
I actually only used half the tenderloin, and tonight I may do one of the baked options with the rest of it....
