    I used to make this a LOT. For some reason I stopped. I think I need to start again! One tip, for all the parents out there: I would have my kids (2 and 4 at the time) help me make this. They are more than capable of putting the raviolis in the pan, putting the spinach on and sprinkling cheese. I didn't let them put the sauce on, but older kids would be able to do that. Makes for a fun time with the kids, and a delicious dinner!

    I just went shoppong and chenged my version up a bit.

    I have a bag of 19 oz Safeway Asparagus Ravioli since they were on sale and lower in calories than the cheese which came in a 25 oz bag. (1000 cals)

    I bought a bag of skim Italian 4 cheese blend and am only going to use 1.5 cups (540 cals)

    I like extra sauce so I havea 26.5 oz can of spaghetti sauce (300 cals)

    And 10 oz of spinach (88 cals)

    For a grand total of 1928 calories @ 241 per serving.

    I will let you know if it comes out as good as the original version or not.

    Veggie ravioli??? who knew!! Certainly not I, do they make spinach ravioli? Sad to say I haven't had ravioli since the days of the canned variety and that was like 100 years ago, yes 100 years ago!:ohwell:

    It sounds really good. I make a spinach lasagne that probably tastes similar AND I use whole wheat noodles, reduced fat mozz cheese and part skim ricotta. It is really good and inexpensive to make, just like your ravioli lasagne.
