I have a recipe for a good Bean Soup...made in crock pot..and you can make 8 -- 1 cup servings to put in freezer for later...
make sure you soak the beans overnite in water or at least soak for 2 hours..
· 4 cups water
· 1 pound Great Northern beans (2 cups)
· 1 cup cubed ham
· 1/2 cup chopped onion
· 1/4 teapoon pepper or to taste
· 1/2 pkg of baby carrots sliced
· 3 ribs celery, chopped or sliced thinly
· 1 Teas each of onion power and garlic powder
I don't add salt to cooking. You can add salt to your serving after cooked if you want.
Cook in crock pot for 5 hours .
Its good soup.

tomato soup, my ultimate favourite simple but good.
800g chopped tomatoes (from a tin)
100ml veg stock
1 onion
2 cloves garlic
torn basil
chop, dry fry, mix, blend, done
serves 4 @ 60ish cals each0 -

This is from a Weight Watchers cookbook and is really good.
Chicken-Tomato Chowder
4 teaspoons olive oil
2 carrots, thinly sliced
6 scallions or 1 med onion, chopped
2 celery ribs, chopped
2 cloves garlic, minced
1 (14 1/2 ounce) can crushed tomatoes
2 cups chicken broth
2 medium potatoes, peeled and cubed (red work best)
1/2 teaspoon marjoram
1/2 teaspoon oregano
1/4 teaspoon ground pepper
1/2 lb boneless skinless chicken breasts, cubed (about 2 breasts)
1/2 cup canned cannellini beans, rinsed and drained (Chick peas work great too!)
2 tablespoons parsley
1 In a medium saucepan, heat 2 tsp of the oil.
2 Saute the carrots, scallions, celery and garlic until softened, 5-7 minutes.
3 Stir in the tomatoes and broth; bring to a boil, then stir in the potatoes, marjoram, oregano and pepper.
4 Reduce the heat and simmer, covered, until the potatoes are tender, 15-20 minutes.
5 Meanwhile, in a medium nonstick skillet, heat the remaining 2 tsp of oil.
6 Saute the chicken until cooked through, 6-8 minutes.
7 Stir into the chowder; stir in the beans and parsley.
8 Simmer until heated through, about 5 minutes.
9 Makes 4 servings 266 Calories
The only thing I do differently is that I do everything in one pot. I saute the chicken first and remove it, then the veggies. This gets up some of the browned chicken bits at the bottom of the pan and adds flavor to the whole dish.0 -
I made carrot and red lentil, just cooked them in stock with cumin and chilli flakes splash of skimmed milk and blend its about 200 cal a serving!0

I make a delicious Slimming World Cauliflower and Horseradish soup
1 large Cauliflower broken into florets
1 large onion diced
1 large potato diced
1tbs horseradish sauce
1.5 ltr vegetable stock
Dry fry the onion in large pan, add potato, cauliflower and stock, bring to boil and simmer until potatoes are cooked. Belend until smooth, season with salt and pepper and stir through horseradish soup.0 -
