Ideas for meeting caloric intake needs...

Over the past few days of actually tracking my caloric intake, I've noticed that I usually come under the daily goal (the last few days, it's been 200-300 cals under), but my carbs, fat, protein, etc. have been either over or spot-on.

What are some ideas for increasing my calories by 200-300/day, without going over? I'd much rather go "over" with protein than carbs, but I don't want it to be completely out of balance. 300 cals of pure protein could be difficult on digestion, and might be full of other things like cholesterol, fat, etc. which I'm already keeping at the proper level.

I'm gluten/soy free (for thyroid issues), and trying to cut down on dairy (history of candida), so many protein shakes/bars are out of the question (and I'd rather get my cals from real food, anyways).

Any ideas would be appreciated!

    How about adding fruits or vegetables - not much protein or fats - & doesn't hurt to add some of those to your diet, in my opinion.
