Dinner Time Rut - What do you make?

What's your go to dinner when nothing sounds good or even worse EVERYTHING sounds good but way over calorie? We're talking minimal fuss simple meals, quick fix ideas like soup and sandwiches, or even a low calorie drive thru or takeaway item.

If I am too hungry to think or cook, I go to a simple cheese quesadilla and guacamole. 1 tortilla, 1/4-1/5 cup of shredded low fat cheddar, and quick homemade guacamole (1/2 ripe avacado diced and smashes, a little fresh chopped cilantro, a couple cherry tomatoes diced, plus a squirt of lime juice and tiny pinch of salt).
If I need to stay lower on calories I like an egg white omelet with some low fat chedder cheese and a side of avacado or sweet potato. The best thing about egg white is that you can eat a big portion without ruining your calorie count for the day, and if you are scared of the word omelet just scramble them up!

Whatever I do for dinner, I try to make it simple. I like to eat before I work out so I don't feel like passing out on the treadmill, so I want my dinners fast and simply so I can get on with my evening!0 -
Whenever I'm short on time or just don't want to cook, I always go to pasta. I saute tomatoes, garlic, and basil while the pasta cooks. Add it to the cooked pasta with whatever kind of cheese I have on had, parmasan mostly. It's very good. I'll also do the same with any leftover veggies but I'll cook them in soy sauce and add them over spaghetti noodles. I also love avocado! We put it on a lot of things or make guacamole for tacos a lot!0

Quinoa fried "rice." I got the idea from Pinterest and then made it skinnier. MFP clocks it in at about 300 calories per serving. Here is one recipe that can easily be modified:

Some of my mods are to use 1.5 cups cooked quinoa (I keep cooked quinoa in the fridge for quick meals) and three cups of veggies. My recipe makes approximately three servings - one each for dinner and enough left for my husband for lunch the next day.0 -
I also make quinoa "fried rice" as a go to meal, I use to use rice but quinoa is healthier and the difference is minimal. I just throw in whatever veggies I have and sometimes add shrimp too. I also make black bean soup over quinoa or any grain. Its easy, 2 cans of drained seasoned black beans and a can of chicken broth simmered with cumin. I mush some of it up with a potato masher (don't have one of those emersion blenders yet) and ladle it over quinoa. Its got a lot of protein and is very filling!0
