Cant eat enough!!

Since starting MFP I have completely overhauled my eating habits - I now actually eat breakfast, lunch and dinner (2 courses) and snack in between also in order to try and meet my calorie goals for the day of 1920 (recently changed from 1420). I am constantly finding that I am not hitting my calorie goal on days that I dont exercise, never mind eating back calories from exercise!

I dont want to starve my body as I want good healthy weight loss, but can't get enough down me :(
The main thing I can think of changing is switching low fat dairy for full fat dairy, but is this a good idea?
What else can I do to get more calories healthily without resorting to eating rubbish just to get the numbers up?
Portion size increase isnt really an option as I feel full ALL the time and it sometimes makes it hard to work out without wanting to puke :(

    Add olive oil to your cooking, or more of it, consume nuts and seeds as snacks and yeah switching from say a low fat yogurt to one higher is fine. I consume Liberte 7% yogurt and can't stand the low, no sugar versions. Add coconut milk to soups or to drinks like protein shakes.

    So many threads on this if you run a search, loads of healthy foods are calorie dense - nuts, seeds, oily fish, avocados, olives, block creamed or unsweetened dessicated coconut, dried fruits, cocoa powder.
