Easy, Healthy Orange Chicken stirfry

3-4 boneless skinless chicken breasts
2 tbs olive oil

whole wheat angel hair pasta (I usually use about 1.5 cups dry..you can add more or less)
OR
whole wheat rice (1.5 cups dry)


2-4 tbs reduced sodium soy sauce
3 packets stevia
1 or 2 fresh oranges
1 large bag of stirfry veggies
2 tbs BBQ sauce
2 tbs washishire sauce (optional)
1-2 tsp crushed red pepper
garl/onion pwdr
salt/pepper & a little paprika for seasoning
chopped green onions/scallions (optional)

Boil water to cook pasta or rice.

Season raw chicken with garlic powder, onion powder, paprika, salt, & pepper. Chop. Sautee' in large skillet with olive oil until cooked.
squeeze 2 oranges into skillet. Take 1/2 of one orange, chop, and add to stirfry (optional). Add BBQ sauce & soy sauce & washishire. Add stevia and any other spices like onion pwdr & such. cook sauce down for 2-3 mins. Add veggies. (microwave before hand for quicker meal prep) or finish cooking veggies in skillet. Add drained and cooked pasta/rice & scallions. Cook down a bit. Add more soy sauce if needed for flavor.



GUYS this is sooooo good. It makes a good portion to feed about 4 people! It is so easy. Takes less than 15 mins and only uses 2 pans so not a lot of dishes. And I usually have all this stuff in the house! :) SO good, low cal, and remember, the more veggies, the better :)
