When it comes to cooking I am 1) Lazy and 2) very bad at it. So I need some easy as hell recipes for stuff I can make once and keep in the fridge/freezer for a few days.

If I had my way I'd live on boiled eggs and carrots. Purely for the fact that I am incredibly lazy

Homemade egg "McMuffins"! I just made these for the first time tonight. They keep up to a week in the fridge and I hear freeze well! Some say they cook the egg then put it on an English muffin with a cheese slice, wrap in foil and freeze. I made half mine scrambled style with green pepper and cilantro.

    Recipe is here: http://www.amyskitchencreations.blogspot.com/2012/05/eggs-for-breakfast-sandwiches.html?m=1

Noodles with premade pasta sauce. I often boil noodles then add alfredo (70 cals per 1/4 cup sauce) sauce the night before and refrigerate it over night and warm it in the microwave at work the next day.
