High calorie/low carb meals??

Hi MFP peeps - I'm on a journey to lose a good portion of weight. I'm being told that I'm not eating enough (I'm not hungry which is why I'm not making my goal) so I need some ideas for meals or snacks that have a little more punch without a huge carb load. I'm starting week 3 today and can see that I'm a little heavy on the carb side and could use something higher in fiber. Whatcha think?

You can easily add extra calories without a lot of carbs by cooking in healthy oils (olive, walnut, etc.), snacking on nuts or seeds or adding them to salads, peanut butter (200 calories for 2 tablespoons), avocados...basically anything with a high fat content will pack the calories.0

I had the same issue with not meeting the 1270 calorie recommendation so I have added nuts and seeds. I am full on 1100 calories so the 50g of nuts and seeds is not enough to put me over the top but puts my calories in the range it is supposed to be.0

Eat avocados on your salad, cook with fat (animal fat, butter, olive oil), eat some nuts, cheese or nut butter.0

Great suggestions! Will give it a try this week. I am still trying to get the concept of "need to eat more to lose weight". I've always assumed the old equation "burn more than you take in" would work but it's just not.0

WOW I could have written this post. I struggle to eat 1200 calories and I am suppose to have close to 1600. I will take everyones suggestions though.0

You must burn more than you take in to lose fat. The difference is that you don't want to create a deficit so large that you lower your RMR.0 -
The advice is probably solid. 1200 sounds way to low. I adamantly disagree about subbing carb calories for fats or proteins. But I suppose to each their own.
the reasoning behind the advice is completely warped though. they want you to eat more so your RMR will not drop. don't worry, this will not happen to you. the hormones that cause this to happen only trigger in when you're already really really low bodyfat. That is, it's only an effective tool for those that have experience dieting and have been on a diet for a very long time. Usually the cheat meal will ramp up metabolism....I must assume you are not at the point where this has any real benefit to you.
the reason you personally should eat a bit more (1600?) is because you'll just feel better. If you're having problems eating that much, you really...and i mean reallllllly should not have problems losing weight.0
