Broccoli Monday!

Starting this week I will be adding broccoli to every meal each Monday!
This is my way of getting my eating habits off to a healthy start at the beginning of each week (after frequently indulging in less healthy foods over the weekend). Who wants to join me?
The challenge is to add broccoli to every single meal today!

p.s. I happen to love broccoli, but If you prefer to substitute another healthy vegetable, feel free! The goal is to make sure we consume a sufficient number of vegetables and start the week off healthy.

Could it be any veggi at any meal,, I got breakfast with sweet potatoe, lunch, brocilli, snack,, well broc, dinner, I think there is broc in my salad0

Sure, why not? I happen to like broccoli but I am not a broccoli lobbyist. I think any vegetable that will help you jump start a healthy diet for the week would be a great addition. Often I fail to consume enough vegetables so a challenge like this helps to keep me on track.0 -

Too late for me. My lunch was made early this morning, and while it is a vegetarian lunch with 6 vegetables and one fruit, there is no broccoli today.
I'm not sure about dinner yet, but I have some collard greens I want to eat while they are still really fresh so probably go with something not green for the second veg.0 -

I'm going to alter it slightly though and add BACON to every meal of days that end in 'Y'. I'll call mine "Normal Life"

I did broccoli, artichokes, spinach, corn, and tomatoes last week.

I made this last week... it's delicious! It seems to sit really well with me before workouts. I used half the broth amount and instead of 2 cups of cheddar cheese I used 1/2 cup of the three in my fridge... cheddar, gouda and mozzerella. One didn't melt completely, but it was SO good. "Ingredients
3 cups broccoli pieces, chopped
3 cups cauliflower pieces, chopped
2 cups onions, chopped
5 tablespoons tablespoons butter or margarine
8 cups cups chicken broth, divided
1 teaspoon teaspoon dried leaf oregano, crumbled
¼ cup cup flour
2 tablespoons tablespoons Dijon mustard
⅛ teaspoon teaspoon pepper
1 ½ cups milk
2 cups shredded sharp Cheddar cheese, more if you like your soup cheesy
salt and pepper to taste
Method
Cut florets off broccoli and simmer in lightly salted water (about a cup of water) for 2 minutes; drain (saving the water for the soup) and immerse in cold water to stop cooking then set aside.
Cut and chop broccoli stalks and cauliflower into small pieces. Chop onion.
Add chopped onions and 3 tablespoons of butter to soup pot; sauté over medium low heat for 5 minutes or till lightly brown. Add chopped broccoli, cauliflower and 4 cups chicken broth and oregano to the saucepan; simmer 20 to 30 minutes. Carefully process hot mixture in batches in a blender until smooth and add back to soup pot. Or blend with an immersion blender. Melt remaining 2 tablespoons butter in saucepan; stir in flour and cook, stirring constantly, until smooth and bubbly. Stir in mustard and pepper and then gradually add the milk. Stir milk mixture into processed mixture and remaining 4 cups of chicken broth and water from simmered broccoli florets. Continue to cook, stirring, until mixture begins to bubble. Add cheese; stir until smooth and cheese is melted. Add remaining broccoli florets and heat through."
