Recipe Confusion

Hi everybody...I'm having some recipe confusion when it comes to measuring and preparation. Can you help me?

When a recipe calls for, let's say, 1 cup of fresh spinach...how do I measure that? I mean, 5 spinach leaves stacked loosely fill 1 cup. However, I can squish 15 leaves in there, or even 20 if I chop it up. What's the right measurement?

I know, I know....spinach is so calorically nominal, it doesn't matter....but for flavouring and balance, it would be nice to know. Spinach was just the first food that came to mind.

What about when it says 4 oz of chicken? If the recipe doesn't specify raw or cooked, when do you think the measurement should be taken....before or after cooking? Or does it make a difference? How do I measure an oz? A protein portion the size of a deck of cards, yes. But, this whole oz thing is frustrating me.

Any advice? No haters, please.

    A food scale is your best tool for this.

    In recipes that list 4 oz that will be raw unless it states otherwise and again food scale to measure.
