Gluten free diaries

Would any of you who are following a gluten free diet be willing to share your diary?

I have been on a logging hiatus for a while and realize that logging my food works much better for me.

    I don't have a diary but I made PBJ sandwiches yesterday.

    I used Udi's Gluten-Free White Bread. Found it in the frozen section at my supermarket. You just throw whatever slices you need in a ziploc bag and let it sit for a few hours until it thaws.

    I used Justin's Maple Almond Butter and some organic grape jelly. This is GF and I haven't had PBJ sandwiches since elementary school, so it was quite nice and thought I'd share.

    If any of you have tried other gluten-free breads let me know what your critique is.

    I was pleased with the Udi's white bread and they also had a Chia-Millet (?) one.

    Thank you! I have not been tested but I'm pretty sure I have some sort of gluten allergy, sensitivity or intolerance. I stopped eating products with wheat in it in June and my reflux went away and my ADHD improved. It's like a drug addiction. Somedays I think I can just take some reflux meds and still have a sandwich on regular bread. Then if I do, 20 minutes later my stomach is cramping and the next day I wake up with a wheat "hangover". Ugh!
