This was a big hit, I made it a little differently. I used turkey sausage, red potatoes, fresh mushrooms and kale. I didn't use the beans or oil. I also added carroway seeds to flavor the broth as I used low sodium chicken broth. But it was delish and the pot was empty as even my picky kid finished it off. He said it was better than Olive Gardens Zuppa Toscana Soup. I ate about 4.5 cups and as we'll as I can figure, it was 367 calories. I would of loved to have had a big chunk of sourdough bread with it, but I was good.
