Use the database to make your own recipes in MFP using the ingredients your mom is using. I bet they are there.
When I spent time in South Africa all the basic ingredients were in the database for all the foods I needed - even local brands of cookies. If it's not in the MFP database, do a search and add it. I am sure you can find the number of calories.
The harder thing I bet, is going to be portions and portion control. I don't know much about Nigerian food, but in South Africa, we ate a lot of pap - corn meal. It has a lot of calories, so I had to be very careful to take small helpings of that and big helpings of things like chard (they call it spinach) and meat.0
