Veggies?!

From time to time I am not so good with getting in my daily allowance of vegetables.. I know that is important to eat veggies for the vitamins they provide, but quite honestly I am really bad with getting them in daily.

It may be the reason why my weight loss has slowed down to 1lb ish a week...(although I set me weight loss goal to 2 lbs a week).

So, my question to all is How do you get your daily servings of veggies in??

  • i like to eat carrots with kraft free ranch sauce as a side to meals, or lean cuisine has some low-cal, low-carb meals with veggies in them, such as the roasted herb chicken one. and it's delicious with only 180 calories!

    I sneak celery, green onions, onions, spinach, lettuce, peppers, tomatoes and finely diced carrots into everything that I can, especially wraps and tuna-salad-like concoctions, just chop it all up good and it adds flavor, bulk and gets more veggies in. My favorite snack lately is light ranch dressing with celery and carrots, or carrots and hummus. I've learned to love tomato sandwiches, YUM, and I've always loved avocados, so that ones easy and yummy.

    I think it all comes down to figuring out which veggies you enjoy and which you do not. You will never LOVE them all but if you tend to enjoy celery and carrots or broccoli and peas, you have to eat what you like! In addition to that, you have to experiment a little and figure out how you best enjoy your veggies prepared. Maybe you like raw carrots or maybe you would enjoy them more if they were steamed. Throwing them into salads or wraps for bulk is an awesome way to get your veggie count up, as mentioned. I like veggies because they give that "crunch" back to your diet without turning to something like chips or other snack foods. Just be mindful of what you might be dipping your veggies in, because there-in lies the calories and fat content!
    Consider this your opportunity to experiment with food a little and be creative!

    I keep my veggies in baggies in a bowl in the fridge, so I can just grab a couple bags of whatever carrots, sugar snap peas, mini sweet bell peppers, grape tomatoes, whatever you like, and when I pack my lunch I get at least 3 bags of assorted veggies in my lunch bag.... Also, one meal a day is a salad. that helps too, except I dont use lettuce, I use spinach. good luck, enjoy!

    I often get those Fresh Express Veggie Lover's Bags and have half a bag with cut up chicken for lunch. Or I will have a cup as a side dish for dinner. I also cut up fresh spinach in my omlettes for breakfast or throw in onions and bell peppers in casseroles. Good luck, it's a challenge but very doable ; )

    I just eat veggies. And lots of them. I try to put them all into a salad. They go together! (Don't you want to go home, ball? It's your home!) Anyone know where that came from?

    I try to prep all my veggies the night before and put them in my lunch bag so I am automatically reminded to eat them daily. Reduced fat peanut butter, low-cal salad dressings and hummus definitely help on the days when your not in the mood to eat your veggies. Also, I work in an office and have readily available access to my food and I've found that keeping a bowl of mixed fresh fruit reminds me throughout the day to snack on natural sugar verses the sugary treats in the vending machine.

    personally, i get sick of the same veggies over and over again, so it is important for me to plan out my meals and rotate them around otherwise i get bored.

    also, i saw that green giant now makes these veggie medley steam bags for one (or two) in several new combinations - healthy weight, healthy vision, healthy heart, immunity blend, digestive health. they look delicious! buy a dozen and make one every night to get you in the habit of eating your veggies, than branch out and start making your own medley.

    I love the steamed veggie bags either in the freezer or the produce section. I don't like the idea of cooking an entire meal for one person, so these are an easy fix for me. I just make sure to get the ones without sauce. My mom goes to the farmer's market on Sundays, picks up every possible veggie she may want to eat and then chops them all up, mixes them together, and puts individual serving size baggies in her freezer. Then she just defrosts and cooks however she feels that day. Usually she does zucchini, squash, onions, peppers, mushrooms, etc.

    Also, I love using spaghetti squash in place of pasta. To me, it actually tastes better in most dishes!
