kickarse filling mushroom soup
made this tonight - borrowed from a few recipes and and just simplifed
1 kilo of mushrooms (large feild mushrooms i used but any would do)
2 cups of veg stock
2 cloves of garlic
half an onion
hand full of parsley
1 tbls of olive oil
2 potatos
brown onion and garlic in pan
add stock
add potato simmer for 3 mins
add mushrooms simmer until mushrooms cook down
wizz with hand blender
add parsley
(i decorated with a small amount of cheese and herbs)
under 200 calories and feed 5 people with toast
