Awesome cauliflower veggie casserole
I don't usually start topics but I made this for lunch today and it turned out so good I had to share
1 head cauliflower
1 stalk celery
1/2 yellow pepper
1/2 red pepper
1/3 C ground flax meal
1 C plain greek yogurt
1/2 C spinach
1/2 C cheddar cheese
1/4 C parmesan cheese
1/8 C milk or soymilk
1 t salt
paprika
Break the cauliflower into florets and steam it.
Mix greek yogurt, cheddar cheese, flax meal, salt, peppers, celery, spinach, and milk.
Add cauliflower.
Put it all in a casserole dish.
Sprinkle grated Parmesan over the top.
Sprinkle Paprika over the top
Bake at 320 covered until dish is heated through and cheese on top is melted.

Oh and I added up the calories from all the ingredients and it's 850 calories for the entire casserole.0
