    I LOVE this recipe, and I also modify it to add more veggies, lower sodium.. I also add a jalapeno for heat!

    Its great on some brown rice, over a baked potato, served with tortilla chips.... and always with some cheese on top!!!

    also, it freezes well!

    I skipped the corn altogether (actually forgot to add it) and it was still really good!

    I made this about 2 weeks ago and it is delicious! I'm going to make it again this weekend, but I'm going to make my own taco seasoning to help reduce the sodium content.

    It would still be high in sodium because of all the canned things. Right!

    I always rinse the canned beans in a strainer to reduce the sodium content!

    There is a similar (if not the same) recipe on SkinnyTaste.com. I made it a few months ago, was excellent, except per a tip, I doubled the cumin- although easily I could have had more- it was absolutely amazing!!!
    Hmm thx for the tip- I think I'm going to make this again soon!!
