Road food

Okay, I have a dilemma (and I hope I'm putting this in the right place)

I'm trying to take my diet in steps (example. step 1, add a fruit or veggie to each meal. Step 2, no fast food, etc). I'll do each step till it's not a hassle any more, ten move to the next one. That way I don't get overloaded and quit.
So, my problem
I'm working on cutting out fast food, and there is no problem 5 days a week. My issue is that on Monday and Wednesday, I have a class from 2:00-5:30, which usually puts me out of the school around 6. Thing is, I have an hour and a half drive home, and a cross a time zone... so I am getting home at 8:30pm. For my system, this is way to late for me to wait for supper without something in the middle, and there is nothing but fast food between school and home.

So basically, I'm asking for some advice on some sort of snack that is easy to eat in the car. I have no problem putting something in my crock pot, rice cooker (that cooks more than rice), or pressure cooker to be ready when I get home. But I know if I try to wait that long between meals I'm going to eat everything in my house (which is rather counter productive).

Any help would be appreciated. Thank you in advance.

    I make hardboiled eggs and remove the yolk. Throw a couple of eggs in some tupperware and you are good to go. The eggs are pretty filling but you might have to worry about refrigeration. A bag of almonds or some jerky might work as you won't have to worry about keeping them at a certain temperature.

    An piece of fruit with some cheese or nuts
    Jerky
    Tuna and cracker snack packs
    Veggie sticks and hommus
    Half a sandwich
    Healthy home made mini muffins (there are tons of recipes online)
    Homemade or store bought protein bars

    The snacks proposed in the previous post would be good, but I wonder if you want to have a meal or a snack. For me, waiting until 8:30 for dinner just wouldn't work. I would be ravenous and if I eat a full meal that late it interferes with my sleep. So maybe you need a portable meal instead of just a snack. Add an apple or a little dried fruit (enough extra to satisfy as a small meal (then you can still have a snack when you get home). Also, there are a lot of "meal replacement bars" that are quick and easy. And, if necessary, you can go fast food. There are a few low calorie choices at most fast food places. Grilledl chicken sandwiches (leave off the mayo), grilled chicken salad, snack wraps (leave off the sauce). Even KFC has grilled chicken now.

    This week I just got a the McDouble cheesburger from McDonalds (on their under 400calorie list) and a small fry... But I really don't want to make that a habit. I know me well enough to know that if I make a habit of stopping at the drive through, I'll start inching back up to the double quarter pounder or the chicken nuggets with a large fry and large soda on bad days... I need to keep that temptation at a minimum.
