Pork Chops

4 3/4" boneless pork chops
2 TBS favorite "hot" sauce - I like Marie Sharp's habanero sauce
seasoning - kosher salt, fresh ground pepper, any personal favorite
medium sized onion - halved and sliced thick (about 3/4")
package baby bella mushrooms - sliced thick or halved
( you can add other veggies: bell peppers, asparagus, zucchini, etc.)
4 slices of baby swiss cheese

season chops and place in baking dish. Arrange veggies around chops. Splash with hot sauce. Cover with aluminum foil and bake 350 for at least 30 minutes (until pork done 30-40 minutes)
Pull out of oven and place cheese on top of chop. Re-cover with foil and let stand until ready to serve.

This was good with some homemade guacamole. Love that stuff.

I'm not sure about the calories exactly, but I remember it being reasonable (300-400 calories depending on weight of chops and serving of vegetables)

Yum! Unfortunately, my husband doesn't eat pork, but I do. I'll make them and eat them!
