Renovated blueberry muffins

Here is a recipe that I found on the All Bran web site. I made a few tweaks here and there to shave off some calories... My kids love them and it makes a great breakfast or snack. + its super healthy :)
I entered it in the database under "All bran renovated blueberry muffins"
I don't remember exactly, but I think they're 127 cal. for each large muffin.

INGREDIENTS
1 ½ cup whole wheat flour
2 ½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 ½ cup All Bran original
¾ cup 1% milk
1/2 cup water
4 eggs white
¼ cup unsweetened apple sauce
½ cup brown sugar (packed)
1 cup fresh or frozen blueberries (do not thaw)

In a big bowl, mix the apple sauce, sugar and egg whites until foamy; in a smaller bowl stir together the remaining dry ingredients; pour into the egg mixture, stir with a spoon until just combined; fold in the blueberries.
I recommend spraying non-stick muffins pans: I used paper muffin cups and since the muffins are almost fat free, they STICK to the cup!!

Bake at 400f 20-22 mins
Makes 12 large muffins

    Amazing - these sound like a great alternative to the MASSIVE blueberry muffins that are sat infront of my desk...:sad:
