I wanted to share my quick and easy recipe for a protein pancake.
1 packet organic instant oatmeal (any flavor)
1 scoop protein powder (I use vanilla flavor)
1/2 cup egg whites (egg beaters)
1 tbsp. ground flaxmeal
This makes 1 pancake. If batter is too thick, add a little water - too thin, add a little more protein powder.
Top with 1/2 cup frozen fruit (pop it in the microwave for 1 minute to warm it up)
YUM!!

Sounds good. I'm going to try this for myself the next time I make the high carb variety for my kids.0

The consistency is a little different in these pancakes due to the egg whites, so be prepared for that. Although I've never done it, you could whisk the egg white until they're fluffy and then fold them into the rest of the ingredients. Would probably make the pancake more fluffy. Think I'll try that next time! LOL!!0
