Ok...juicing? Plant based? Something else?

Going to NYC in a few weeks and when I get back, I really want to focus on cleaning up my diet even more. Currently, I'm pescetarian but looking to cut out fish, slightly reduce dairy (mostly cheese which has spiked since giving up meat, I'll admit), try to eat whole grains whenever possible and limit processed foods/salt/sugar.

I don't want to cut out dairy entirely -- everyone is different but I personally believe dairy has its advantages. However, for ethical purposes, I've switched to organic but recently started getting eggs from a local farm shop where the chickens actually do roam freely and well looked after, and want to attempt to source out other dairy locally and ethically. I'm also going to start buying fresh fruit and veg from the local farm shop or market (which are mostly grown on site as I wholeheartedly believe that produce lose most nutrients--and taste!!--by the time they hit the shelves).

I just love the idea of eating more plant based foods which I think will work well for me, especially as I love most fruit and veg anyway. But there is so much info online that I don't know where to start. Can anyone give me advice on juicing, plant-based diets, etc?

Is chocolate/wine okay as an occasional treat? By following these diets, is it realistic to get enough protein, etc? How can I ensure that (aside from nuts and oil) I'm getting enough calories? This isn't about losing weight as I'm now on maintenance so depending on exercise, I usually consume between 1800-2100 calories.
