Diet and Sleep...or lack of sleep

I have had a lot of trouble sleeping this week. I feel like I just haven't been getting enough sleep. Part of this is because I just started a new job and my body is adjusting to this new schedule of getting up before the sun and then not being able to go to bed at a decent hour. I am making the effort to go to bed earlier but things keep popping up. I've been to the gym once all week. I normally go 4-6 days a week. I'm noticing that I'm craving the foods I shouldn't be eating, such as potato chips and candy....and it's NOT PMS. Normally i'm really good with what i'm eating and tracking my calories. I'm feeling a little frustrated that I have zero motivation to do anything more than sleep and my diet is slipping because of it. Any suggestions? Ideas? Similar experiences?
