P90X Phase 1

Ok, I admit I'm not real active on here, but I do stalk just about every day.
Just a little background, in April I was 263 and I used MFP to get ahold of my diet and started working out and now down to right around 200. I have quit logging food as I have a pretty good idea of what I should eat.
The next thing I want to do is P90X, but if I'm gonna do it I really want to follow the diet macros. My question is HOW??
I'm not a real big FOFO guy, can't eat cottage cheese or anything like that. Don't mind eating chicken and steamed broccoli every day but I work nights and the snacks are gonna get me. I mocked up what I thought to be a decent day and first I'm way short on calories and 2nd my carbs were still way too high.
I have been eating an apple first break at work and a banana last break for some time now and these kill my carbs. I want to stick with my 2 scoops of protein and a banana after my workout, which I do when I wake up.
I guess what I'm looking for is help on high protein low carb snacks I can throw in my lunch box and eat 6-8 hours later.

I recently started focusing on upping my protein. Snacks I usually bring to work:
cottage cheese
string cheese
almonds
edamame (I buy frozen, cook ahead of time and eat cold.)
Greek yogurt
Low sodium deli meat0
