light calorie easy to make mexican dish

I love mexican food so I made two of these last night and they were delicious........523 calories total

Eggs - Fried (whole egg), 2 large
Macayo - Diced Green Chiles, 6 tbsp
Fresh - Cilantro,
Sauce - Salsa, 0.5 cup
Pinto Beans, 1 cup
Cheeses~Jen's - Kraft Cheddar Fat Free Shredded Cheese, 1/4 cup
Arizona - White Corn Tortillas, 2 tortillas

1. Put the pinto beans on the stove to heat them up
2. I heated up the tortillas in a pan.
3. Cut the cilantro
4. Cooked the eggs

I then placed the tortillas on a dinner plate and made basically a tostada. I put the beans down first, then the cheese, then the cilantro, then the green chilis, topped it off with the egg and then put the verde salsa on top of that. Very easy, very tasty. The good thing is you could also add/delete other ingrdiants to make it the way you want. Enjoy
