Meals for One

I need help. I live in my apartment all by myself. I need recipes that feed like 1 or 2 people. That are healthy and don't require me to buy tons of groceries. I realize I could just cut down the recipes but I would just like to hear everyone's input. I could also make the full recipe and eat leftovers but I am not a big fan of them. I do like to cook but when I cook and then sit down to eat by myself I get kinda blue. I don't know why. I feel like dinner should be enjoyed with family and stuff. Not sitting alone. I pretty much refuse to even sit at my table to eat. And I am tired of eating prepacked foods. When I cook I control what does into stuff. Anyway. What are some easy healthy recipes or go to things for you? I thank you in advance.

    Do u pack a lunch for work? Make a reg dinner and package your own homemade frozen dinners. make a fun night and invite a friend(s) over and have a lil dinner party where u can all cook healthy. You can also go to the local library and look for cooking for one/two cookbooks. Or try searching the net for them.
  • My partner and I haaate reheated food and so we have the same problem! We have some tupperware that we use to split meat into portions and freeze it until we need it. Veg lasts ages in the fridge and it usually means that meat is cheaper in bulk!

    A 600g pack of mince will feed us both for 3 separate meals, meaning I can cook Bolognese fresh every time. We do the same with minced lamb, for shepherds pie (the only meal i'll reheat)!

    Keep an eye out on my blog for a summerset set recipe I made this evening. I'll be putting the recipe on there tomorrow!
