Easy Meal Ideas

Hey, guys! I'm a big leftover person and really like to just be able to reheat stuff on nights I'm too tired to cook. Give me some quick, healthy recipes that yields enough for leftovers the next night. (not soups, we just exhausted our 'soups' options lol)

When I was a uni I used to make big baking dish meals, portion them up and freeze them. Works well with any pasta style dishes.
Some ideas:
Spaghetti bol with chopped (or grated) zucchini, carrot and mushrooms
Lasagne - i usually do one layer meat sauce, 1 layer spinach and ricotta and 1 layer mashed pumpkin
Fried rice - chop up some chicken and veggies and stirfry, add some cooked rice into the frypan and some soy sauce
Jacket potato with a chilled topping or baked beans is really easy - takes a while to cook but other than wait, you don't have to do anything
Tuna casserole - mix rice, tuna and chopped veggies with a can of condensed soup (chicken works well), top with a mixture of breadcrumbs and reduced fat cheese and bake0
