Vegetarian St. Patty's Day Recipes?

Any ideas??? I would at least need something for the main dish. I could do potatoes and cabbage... but what for the main dish? I haven't cooked much with faux meat but worth a try if anyone has an idea that could replace corned beef, etc.

    I'm making green pancakes for dinner. It's not traditional Irish food, but it works!

    Last year I did cabbage and potatoes with eggs. The husband and kid were not fans, but I liked it. They just don't like cabbage.
