Snack help/advice please

Tuesday through Friday my father wakes up at ungodly hours to deliver meats, cheeses, and drinks across Central Texas. He does a lot of driving and has to fight to stay awake. The easiest way for him to do this is by eating while he drives and he usually ends up eating chips, chocolate, and little debbie cakes. Basically ALL UNHEALTHY THINGS. Most of the time it's me who has to pack his lunch and I always feel terrible packing these things for him.
So my question is:
What sort of snacks can I pack for my dad that are healthy, easy to eat while driving, and could give him an extra energy boost?

Fresh fruit
Nuts
Yoghurt
Dark chocolate
Hard boiled eggs
Bananas
Popcorn
Jerky

Sandwiches on whole grain bread or wraps0 -
Judging from his previous choices I'd say he has a sweet tooth. How about raisins and/or dried apricots?0
