BLACK BEAN DIP
(from a high fat recipe that has been pared down- -still not perfect but better than before!) or cook your own beans
2 15 oz.cans black beans or blackeyed peas (rinse, drain, and discard juice)
2-3 Tablespoons chopped jalepeno peppers, depending on heat preference
½ c. finely chopped onion
½ c. sour cream, use reduced fat or Greek Yogurt to make it more healthy
*1/2 teaspoon salt ( optional)
4 Tablespoons Pace picante salsa (chipotle flavor is best, can use any )
2 cups grated cheddar or jack cheese (use low fat or regular , and can reduce cheese amount further)
Fresh ground pepper to taste
Preheat oven to 350 degrees.
Mash beans with a fork, leaving some chunks. (do not use blender or food processor).
Add remaining ingredients, reserving ½ cup of cheese for garnish.
Pour into shallow baking dish, top with cheese . (can prepare to this point and refrigerate.)
Bake for 25-30 minutes or until hot and bubbly.
Serve with chips, flour tortillas, and raw veggies.
