Going Vegetarian

Hey guys,
I'm slowly going Vegetarian, I've given up meat before but failed because my OH is a big meat eater and I kinda feel confused when there isn't a meat portion in most meals. I'm not too much of a veg lover although I'll eat most of it.
I've decided this time to give one meat up at a time, so far I've given up Pork and Lamb, Lamb isn't too bad since I rarely eat it but I ate Pork as my main 'meat' so that's a big different, I don't feel like I'm missing it though.
I'd like some advice on how to keep everything healthy inside me, how to gain everything I need without having meat in my diet?
I'm giving up meat because I am an animal activist. I do no use any household, body or cosmetic products that are known to be tested on animals, this also includes food (yes they do test food on animals, and i don't mean just feed it to them). A company I avoid like the plague tested a certain tea on rats, solely feeding them on it, scolding them and such... it seemed so unnecessary since so many 1000's of people drink tea everyday, all day. It would be easy to find a human guinea pig to study This company owns pretty much 2/3rds of all products in the supermarket so you can see how much I gave up, a lot of the products were favourites of mine before I learnt of this.
Anyway, growing up on a farm, we ate our own reared meat which was treated well up until death and free range. Since moving away from the farm, I've not been able to afford free range and the more I hear about how animals are treated because of the demand for it and the lack of money the farmers receive makes me feel guilty when eating meat, so I've decided to give it up slowly. I will still be eating animal products like milk, eggs, cheese.
