easy, quick eating choices

Hi, I have a very busy life and often don't have time to spend in the kitchen. So I'm looking for some easy recipes that can be prepared very quickly. Breakfast, lunch or diner.
And what do you guys like preparing when you don't have a lot of time?

  • The quickest breakfast is a 2 egg omelette with a dash of cheese and tomato. 5 minutes to prepare/cook, less to eat!
    My quickest dinner is always a stir fry of some kind.

    Lunch tip:

    One thing that really helps me is cooking my skinless chicken breasts on a Sunday for lunches during the week. It will keep (cooked) in the fridge for 5 days.

    Then, I make sure I have tinned and frozen veggies to add to my lunches in case I don't have freshly cooked veggies left over from dinner.

    That sorts out my lunches for the week.

    Snacks:

    Fruit and mixed nuts - easy to grab and run with. (Watch out for the calories, though.)

    Also a good meal replacement shake.

    Or yoghurt and fruit.

    I make a 'bucket salad' for lunch if I'm in a rush. Just chuck any and all veggies and or fruit you can find into a container with a tin of tuna or salmon. Takes less than 5 minutes to make
  • I often pre cook a chicken or chicken fillets and shred it then put it in the fridge and can then use it the next day for wraps, adding to omlettes, making a quick salad etc I use the slow cooker alot too, chuck everything in the morning and its ready for evening meal. Can also make a batch of veggie soup and freeze it then just heat it up as i fancy.
