Low calorie chili recipes with beef?

Does anybody have a good low calorie recipe for chili that includes lean ground beef? I don't mind ground turkey, but my husband prefers ground beef... Thanks!

I found this one recently, I had planned on making it this week.. If you try it, let me know what you think!
Hearty Chili
Calories: 370
Servings: 5
1 lb ground beef
1 Tbs olive oil
1 can black beans
1 carrot
1 stalk of celery
1 fresh tomato
1 cup low sodium tomato sauce
1 white onion chopped
1/4 red bell pepper cubed
5 cloves of garlic chopped
1 tablespoon chili powder
1 tsp oregano
1 tsp smoked paprika
1 tsp ground coriander seed
1/2 tsp cumin
1/2 tsp cinnamon
1/2 stevia
1/2 tsp salt
1/2 tsp pepper
cilantro for garnish (optional)
Heat heavy bottom skillet on med high. Add bell pepper, onion, 1 clove of garlic and beef and cook for about 2-3 minutes. Add beef and cook, breaking it up with a wooden spoon, until no longer pink and browned about 8-10 minutes. Add tomato sauce, 1 cup of water, spices, remaining garlic and celery. Lower heat and shimmer for 30-40 minutes. Garnish with cilantro and enjoy!0 -
Mine is very simple compared to that ^ but I promise it tastes nice :laugh:
I make chilli on a regular basis as it's a firm favourite and this is the method I use:
500g extra-lean mince beef
2 crushed garlic cloves
1 medium onion
1 can chopped tomatoes
250ml passata
1 beef stock cube (I use Knorr rich beef stock - admittedly a little high in salt but it's full of flavour)
200g kidney beans
Spices (I use smoked paprika, a pinch of cayene chilli pepper, and dried chilli flakes)
Seasoning to taste
Cook the onion and the garlic till soft, then add the minced beef and cook till brown.
Drain any excess water out of the beef and add the chopped tomatoes, passata, stock and spices.
Turn the heat down and leave to simmer for approximately 20 mins, then add the kidney beans and cook for another 5 minutes.
This for me makes 3 portions but I am a big eater so you may be able to divide it into 4.

Carbs: 26
Protein: 43
Fat: 9
Or if 4 portions:
Cals: 266
Carbs: 19
Protein: 32

My chili recipe is pretty low-cal. (I would never dream of using ground turkey.)
Mine makes 48 fluid ounces:
12 ounces ground beef
1/2 an onion
1/2 green pepper
3 cups cooked kidney beans (These are dry beans already cooked. Or you can use two 15oz. cans)
10 oz. diced tomates (about one 14-15oz can)
15 oz can of tomato sauce
6 oz. can tomato paste
12 ounces vegetable juice
Spices, to taste
(I use chili powder, garlic powder, cumin, and a little cayenne pepper)
This comes to:
Total for 48 ounces: 2206 calories, 130g protein, 254g carbs, 75g fat
Per 8 oz. Serving: 368 calories, 22g protein, 69g carbs, 13g fat
You could actually make it 12 ounces per serving for a total of 4 servings at 550 calories each, but I use smaller servings because I eat it for my lunches at work, and I don't like to eat too much for lunch. I tend to eat smaller breakfast/lunches and a large dinner.
EDIT: I should add that I always use 80/20 ground beef. So if you are using lean ground beef, that will lower the fat and calories somewhat. I prefer to save money rather than fat grams. :laugh:0 -
