Chicken veggie burgers

Made a new easy burger tonight that was delicious!

Makes 4 burgers (4oz each)

Ground chicken breast, 99% fat free
medium zucchini, finely shredded
1/4 cup parmesan cheese (ground)
salt, pepper, oregano to taste
1/3 cup panko breadcrumbs

Mix up the chicken breast, shredded zucchini, parmesan and spices. Make 4 4oz patties.

Heat up skillet and spray with cooking spray. Sprinkle a pinch of the breadcrumbs over the tops of the burgers and place the burgers face down in the skillet. Cook for 5 minutes. Put another sprinkle of breadcrumbs on the other side and flip burgers. Cook about 5 minutes or until cooked through.

I place a slice of fat free cheese on top and use one slice of toasted sprouted sourdough bread to make a patty melt.

Calories per burger - 120 without bread and cheese, 225 with one slice cheese and bread
