Cheap, easy, AND healthy?

I am always on the go, with a few hours scattered in the week of free time that I clean and sometimes prepare food. I usually opt for microwave meals and I know although I choose lower calorie options, they still are not healthy for me. Are there foods I can prepare in advance that won't consume too much time? I've been thinking of making and freezing smoothies to eat through out the week. I will refrigerate peanut butter or ham sandwiches in advance at times. But these aren't always the greatest options either. I'm looking for suggestions, links, whatever.

    Make some soups, low cal and healthy and easy to freeze x

    Invest in a crock pot.

    I like to cook up a pound of chicken thighs with a can of diced tomatoes, some diced onion, and a little lime juice. Cook on low for 8 hours and you have instant taco filling. I portion it out into baggies and then just add some other vegges and a tortilla and microwave when ready to eat.

    You can also make crock-pot beef stew - get a beef roast on sale (don't buy stew meat - you pay for the convience of them cutting it up). Cut it up into 1 inch chunks and brown in a pan. Put in a crock pot with beef stock, diced carrots, frozen peas, diced onion, and diced potatoes and cook for 8 hours on low with your choice of seasoning (I like salt, cumin, garlic powder, and rosemary).
