Hi all,
Might be a long shot but i was wondering if anyone could share any relevant healthy, quick, budget friendly meals that fussy kids may like. I work long hours and dont get a lot of time to prep meals.. i only work 3 days so i have a few days up my sleeves to pre-cook or prep some meals.. just need some good reciepes. Always had trouble with using my imagination when it comes to cooking!

Anything would help & pics would be a bonus, Thanks heaps :)

    I've been searching Pinterest for recipes. My toddler is also picky so I've been trying to find low-fat casseroles (which can be frozen and re-heated). We love sweet potatoes and quinoa here, so I try to incorporate those healthier foods into our meals. If it's a higher cal meal, then I'll just have a double helping of steamed veggies and a little less of the other part of the meal.

    Cooking dinner is always hard for busy moms - even harder with picky eaters.
    When I make spaghetti I toss in some frozen cut leaf spinach (about 6 ounces) in the sauce the kids don't notice the spinach so much because it mixes in and I tell them it is seasoning or herbs. I heave heard that people also do this with shredded carrots although they might take a little longer to cook. You could also try spaghetti squash instead of noodles - it was super easy to cook. check out about.com for cooking tips / ideas.

    I borrowed the cookbook "Deceptively Delicious" from the library. She basically purees the veggies and fruits so they can be mixed in with any recipe from spaghetti or mac n cheese to pancakes or oatmeal. Just another idea. :)
