Chia Pudding with Pureed Strawberry topping - low sugar and fat

Ingredients:
1/2 Cup Chia seeds - I used Chialife Ultimate
2 Cups unsweetened almond milk - I used Silk
Vanilla Extract, I like a lot so I used 2 tsp, but the original recipe I changed used only 1/2 tsp
Fruit pureed for a topping to add some sweetness. I used unsweetened strawberries, partial thawed. I plan to try blackberries (mashed, not pureed), and other fruit

Directions:
Mix almond milk and Chia seeds and Vanilla
Stir well
Put in the refrigerator and stir a couple of times the first hour to undo any clumping.
Let sit in the refrigerator 12-24 hours for Chia seeds to turn into gel texture.
Puree the fruit in a separate container.
Put each serving of pudding into a bowl/onto a plate. Pour the fruit puree over the top.

Add raspberry puree for more fiber
